I made Inaniwa Udon for Japanese New Yoker Magaine Japion
Do you like Udon noodle? Inaniwa udon is made in my home prefecture Akita in Northern Japan and is one of the highest quality Udon made in Japan. Inaniwa Udon is thinner and lighter than regular Udon noodle.
Mostly, we Japanese eat this Inaniwa Udon with cold or hot “dashi” broth soup made with Konbu seaweed, dried bonito flakes, shiitake mashroom or something, but I sometimes cook Inaniwa Udon like spaghetti at home. I made Japanese taste “bolognse” sauce for Japion NY. It’s super easy. Just fried some minced meat (I used chicken this time) with chopped some leftover vegetables in a refrigerator like mushrooms, tofu, red peppers, eggplant…whatever. The flavor is made with soy souse, mirin(sweet cooking sake), some spice, sesame oil…whatever as you like!
I paired Dewatsuru Habataki from same region Akita for this dish. Very clean, sharp, but flavorful. The bottle is very beautiful as a gift too.
By the way, the brown pieces by the noodle are smoked daikon radish pickles called “iburi gakko” which made in also Akita prefecture. My mom sometimes sends me special hometown flavor box! This plate is also, my mom sent me. Akita prefecture has huge butterbur leaves like umbrella. I have a picture that I used the real leaf as an umbrella in a mountain when I was very little…. My mom’s special hometown flavor box reminds me many of my lost memories….
Lately, finding good Japanese products in NY is not so difficult. If you are interested in Udon noodle or Japanese food, try and find your fun way at your dining!
Ayumu Takahashi kissed Dassai 23
Finally, I met this cool Japanese man Ayumu Takahashi who is a very popular writer/publisher/photographer/traveler/principal of primary schools in India and Jamaica/great daddy for his kids/great husband for his wife/some of cool restaurants’ owner including Bohemian.
He came to NY for the special private party for his team called Play Earth. I really enjoyed!!
I told him Mr.Sakurai of Dassai is huge fan of him. He was excited about that then kissed the bottle of Junmai Daiginjo Dassai 23 because he is big fan of Dassai! He said Dassai Sparkling is the most popular sake at Bohemian Tokyo.
These beautiful girls were from ELLE magazine. They love classic robust Junmai taste sake Tengumai. I’m so happy to hear that because some girls still believe Junmai sake is too strong. Tengumai is one of very popular classic Yamahai Junmai brewery, but Tengumai Uma Jun is classic Junmai flavor, but milder than regular Tengumai, and goes well many kinds of dishes from all over the world! Especially, with rich flavor dishes used butter or cheese like French or Italian, sooo good! Sake is not only for Japanese dishes. Trust me!
The party started at 7pm, and finishes at…. next morning?? Many of great new people, great food, and of course great sake….it was FANTASTIC night! Sake Samurai enjoyed too!

ASC was established in June 2006 to introduce AKITA Prefecture’s sake, food, and goods
to the people in the NYC area. This Autumn, ASC is proud to announce “The Akita Sake Tasting Event” on November 11, 2009.
Please join over 20 visiting sake brewers from Akita and different all across Japan to taste over 30 of finest sakes we have chosen for you to try.
You can also savour some of Akita’s delicacies such as Kiritanpo, mashed rice stick, broiled and boiled in soup, Akita miso flavor honey chicken, Iburi gakko (Smoked radish pickles), and many others. For our environment’s sake, please bring your sake glass !
Guest musicians will be performing Jazz for our guests.
